Lemon Meringue Shandy

Ingredients

Lemon Merginue

  • Vital Farms Egg White, (at room temperature)
  • tablespoon fresh lemon juice
  • tablespoon granulated sugar
  • teaspoon cream of tartar

Shandy

  • ounce limoncello
  • ounces lemonade
  • ounces light beer
  • lemon wheel, (for garnish)

Instructions

  1. To make the lemon meringue, add all ingredients to a mixing bowl. Use a handheld mixer to whip until soft peaks form. (Optional: Place in a piping bag and set aside.)

  2. To make the shandy add limoncello, lemonade, and beer to a chilled glass. Gently stir. Pipe or spoon the meringue on top of the shandy.

  3. Use a kitchen torch or grill lighter to gently toast the top of the lemon meringue. Garnish with a lemon wheel. Cheers!
