Fried Eggs in Zucchini Nests

Ingredients

  • medium zucchini
  • cup parmesan cheese
  • salt and pepper
  • tablespoon Vital Farms Unsalted Butter
  • Vital Farms Eggs

Instructions

  1. Shred the zucchini using a zoodler, box grater, or vegetable peeler into long, thin shreds. Add to a bowl and combine with the parmesan cheese. Season with salt and pepper.

  2. Heat a large skillet over medium heat. Add the butter and once melted, add the zucchini into four small piles in the skillet, leaving a little space in between each.

  3. Let them cook for just a minute or two, until the cheese just starts to melt. Crack an egg on top of each nest, season with salt and pepper, and place a lid on top. Let the eggs cook until the whites have set and the yolks are still runny, about 5 minutes or so.

  4. Transfer nests to a plate and enjoy.
