Snickerdoodle Granola Bars
A granola bar that tastes like a snickerdoodle cookie?? Yes, please! Make a batch of these at the beginning of the week and have a tasty and healthy snack within arm’s reach anytime the kiddos ask for a snack.
Ingredients
- Vital Farms Eggs
- cup Vital Farms Unsalted Butter (melted and cooled slightly)
- cup maple Syrup
- teaspoon vanilla Extract
- cups old-fashioned oats
- teaspoons ground cinnamon
- cup roasted almonds (roughly chopped)
- cup dates (pitted and roughly chopped)
- cup flax meal
- cup chia seeds
- teaspoon salt
- tablespoon raw sugars
Instructions
Preheat oven to 350° F. Line an 8-inch square baking pan with parchment and set aside.
In a large bowl, whisk together the eggs, melted butter, maple syrup, and vanilla extract. Add in the oats, 2 teaspoons of cinnamon, almonds, dates, flax meal, chia seeds, and salt. Mix everything together well then add the mixture into the prepared baking pan and press into an even layer.
Mix together the raw sugar and remaining 1/2 teaspoon of cinnamon. Sprinkle evenly over the granola bar mixture.
Bake for about 20-25 minutes, until light golden-brown. Allow to cool completely then remove from the pan and slice into 8 bars and enjoy.
